Enchilada Casserole with Spicy Black Beans...

I saw this recipe in this month's Cooking Light and made it the other night. It was delicious!! My pictures seriously don't do it justice...it was GREAT!! And surprisingly easy... the spicy black beans would be a great side for just about anything!



Enchilada Casserole
Ingredients:
1 pound ground sirloin
1 cup chopped onion
1 tablespoon butter
1 tablespoon minced garlic
1 1/2 tablespoons all-purpose flour
1 cup fat-free, lower-sodium beef broth
1 tablespoon 40%-less-sodium taco seasoning mix (like Old El Paso)
1 (8-ounce) can no-salt-added tomato sauce
4 (8-inch) whole-wheat flour tortillas
1/3 cup(1 1/2 ounces) shredded Monterey Jack cheese with jalapeno peppers (I had to buy a block of cheese and grate it)
Optional ingredients: 1/2 can whole kernel corn, green bell pepper

Steps:
1) Heat a large nonstick skillet over medium-high heat. Add beef and onion to pan; cook 6 minutes, stirring to crumble. I added a half can of whole kernel corn to the beef mixture- a chopped green bell pepper would be great too! If you had the bell pepper just make sure to cook it with the beef and onion so it softens!

2) Preheat oven to 400*.

3) Melt butter in a medium saucepan over medium-high heat. Add garlic; saute 1 minute. Sprinkle with flour; cook 30 seconds, stirring constantly. Add broth, taco seasoning, and tomato sauce to pan. Bring to a boil; cook 2 minutes, stirring occasionally. Add 1 1/2 cups tomato mixture to beef mixture; reserve 1/2 cup tomato mixture. 

4) Place 1 tortilla in a 9-inch plate. Top with 1 cup beef mixture. Repeat layers, ending with tortilla. Spread reserved tomato mixture over tortilla. Top with cheese. Bake at 400* for 10 minutes or until cheese melts. Cool slightly. 

NOTES: 
I was worried I had used WAY too much garlic but I could barely taste it. So don't worry it will turn out well. Also I had enough to make a second one in a small pyrex dish because my pie dish was shallow... Feel free to add a little more than a cup of the meat mixture if you aren't going to make two. Cut into wedges and serve! It's SO good!


Spicy Black Beans
Ingredients:
1 (15-ounce) can Organic no-salt-added Black Beans, rinsed and drained
2 teaspoons canola oil (I used vegetable oil)
1 red bell pepper (I used a green bell pepper)
1jalapeno pepper
1 lime
1/4 teaspoon salt
1 tablespoon fresh cilantro

Steps:
1) Heat a large nonstick skillet over medium-high heat. Add 2 teaspoons canola oil to pan; swirl to coat. Add 1 cup chopped red bell pepper and 1 minced jalapeno pepper; saute 4 minutes.

2) Add 2 tablespoons fresh lime juice, 1/4 teaspoon salt, and 1 can black beans. Cook 3 minutes or until thoroughly heated. Sprinkle with 1 tablespoon chopped fresh cilantro.

NOTES:
You can use any color bell pepper available so don't worry too much about that. I also just squeezed all the lime juice I could into the skillet instead of worrying about measuring it out. My beans may have been a little overcooked but they turned out so delicious!! 




War Horse...

A couple of weeks ago I managed to talk Frank and Kelley into going to see War Horse (of course I had to pay for them). Originally I had planned to make Kelley and Graham see it on Christmas but both of them thought it looked stupid, as did Frank. Anyway it is one of the best movies I have seen in a while!! Here is the trailer...



I almost started tearing up just re-watching the trailer. This movie is long so go into it knowing that, but it is seriously wonderful. There are slow parts but it's such a well made movie that I wasn't bothered by this. I must say that I cried (as in ugly crying, as in it's embarrassing to be in the movie theater because I'm gasping for breath and letting out loud sobs crying) most of the movie. SO if you are an animal lover like I am take plenty of tissues! It takes place in WW1 so I loved the history aspect as well!


Jeremy Irvine did an awesome job as Albert who trains the horse as a young boy only to have him taken away at the beginning of the war.

Although hard to watch, it was very interesting watching the war scenes. I can't believe how they used to fight. 

Prince William and Kate just went to the London premiere...
Kate looked so pretty! Apparently she cried during the movie as well... pretty sure I read that on people.com.

I definitely recommend going to see this movie- especially in the theaters! Kelley loved it as well, and Frank thought it was ok.  (probably because he is just being stubborn) Graham now wants to see it because Larry King was raving about it as well. If you don't trust me just read all the reviews!! IT IS AMAZING!!

Taylor and Anne Reaghan on Christmas...

I couldn't resist sharing this cute picture Graham sent me. This is Sophie and William (my 2nd cousins) with their dog Sam. Please check out Sam's accessories....I know that Lucy would never sit through this!

Catherine's Baby Shower...

A few snapshots from Catherine's baby shower on Saturday. It was SO much fun! The food was great and the company was even better! Can't wait for her baby girl!!

Mimi and her mom made these AWESOME lamb cookies....

Catherine was so genuinely excited for every present, it was really sweet.


There were tons to open... 

Catherine was SO happy to get this vibrating chair...We were taking guesses at was in the big box.

3) Portable Nanny (I think there was something called this)
4) Hand-painted pillow by Milly (Mimi's mom)
5) Any of the handmade items...

All of the presents were awesome, and now "we can only hope it works" as Catherine said when talking about giving birth.
