Lucy's First Visit to the Hospital...

So yesterday my mom and I decided it was imperative that we take Lucy to see my dad at the hospital. I mean for the first few days Lucy didn't really notice my dad was gone but since Lucy, like the rest of us, is a daddy's girl she was starting to get "stressed." How do I know this? Because Carole wanted me to take her to the vet on Saturday because she was acting funny...the vet said she was running a low fever and it was all probably due to the fact that John was in the hospital. So Lucy got to be reunited with him yesterday...and of course I documented it.

The Vampire Diaries...

Since I have been in Greensboro for most of the past week I have had the chance to become truly OBSESSED with The Vampire Diaries. The first few episodes I watched gave me nightmares about people being murdered so I was pretty sure I was going to have to give up the show. However, I was determined to see what the big deal was about this show and therefore stuck with it. And now I understand. I love it. I'm so disappointed to be caught up to the current season. Before I go any further here is my favorite scene so far... obviously I'm way too big of a hopeless romantic.



I really think I have a problem because I'm so obsessed with this show. Everyday things are starting to remind me of it...there has been more than one occasion where I have been positive I've been compelled. And visiting my dad in the hospital and looking at his IV bags...all I was thinking is wow those look like the bags of blood they steal from the hospital. PROBLEM. Mimi sent out an email last night to her bridesmaids and mistakenly put my blog address as "www.katesnider.bloodspot.com." She knows nothing about my current obsession with The Vampire Diaries...my first thought was I wonder if that's already taken. I'm still trying to convince Kelley to watch it, even though she insists that she's not into vampires. I told her I'm not either I just love The Vampire Diaries and Twilight....that doesn't mean anything.

I just can't bring myself to show a picture of Elena and Stephan, I love him but he's just not right for her.

Lastly I love the Vampire Diaries because I love the fact that Nina Dobrev and Ian Somerhalder are a real life couple...

I unfortunately won't be making the Dirty Dancing Festival, which may not be a bad thing because it's supposed to rain. Instead I will be in Raleigh helping dear ALEW celebrate her birthday early!!

My New Obsession....

I'm officially obsessed with the blog Skinny Taste. Apparently people give this lady everyday recipes and she makes them "skinny." Well if last night's meal was any indication on how all of her recipes turn out I will only be using this for future meals! Last night I made Chicken Rollatini Stuffed with Zucchini and Mozzarella. It was SO SO SO SO SO SO good!! Definitely make this recipe! 

Here's a picture of what it's supposed to look like...


Ingredients: 
  • 1 tsp olive oil
  • 4 cloves garlic, chopped
  • 1 1/2 cups (1 medium) zucchini, shredded
  • 1/4 cup + 2 tbsp Romano cheese (or parmesan)
  • 3 oz part skim shredded mozzarella
  • salt and pepper to taste
  • 8 thin chicken cutlets, 3 oz each
  • 1/2 cup Italian seasoned breadcrumbs
  • 1 lemon, juice of
  • 1 tbsp olive oil
  • salt and fresh pepper
  • olive oil non-stick spray 


1) Season chicken cutlets with salt and pepper. (I just used regular chicken breasts because they were small, but you can use regular size just make sure you pound them so they are thin).
2) Preheat oven to 450*. 
3) Lightly spray a baking dish with non-stick spray.

 4) Take the skin off the zucchini and shred using a large cheese grater.

5) In a large skillet heat olive oil and then add chopped garlic and saute for a couple of minutes until golden. 

6) Add zucchini, 1/4 cup Romano cheese, salt and pepper and saute about 3-4 minutes, stirring occasionally. 

7) Set aside to cool.

8) When cool add mozzarella cheese and stir to combine the mixture.
9) Lay chicken on a flat surface and spread about 3 tablespoons of the mixture onto each piece. 
10) Loosely roll each piece and then place seam side down. 

11) Combine breadcrumbs with grated Romano cheese in one bowl; in a second bowl combine lemon juice, olive oil and pepper. 
12) Dip each piece of chicken in the lemon juice mixture and then in the bread crumbs and place seam side down in a baking dish.

*Here they are before they go in the oven. Apparently I just noticed I was supposed to lightly spray with olive-oil non-stick spray but I didn't...oops.

13) Bake 25-30 minutes. Mine didn't turn out as pretty as the picture but they were seriously so good.


We ate it with a side of asparagus and a little bit of mac and cheese! 

Kelley was in town for the night! She needed Frank's help with a math test HAHA.

I can't tell y'all how much we enjoyed these!! I was pretty skeptical about the zucchini and mozzarella mix (love them separately but wasn't sure about using as a stuffing for chicken) but it was AWESOME. This is a MUST try! Apparently these only have 171.9 calories per piece of chicken...I find this SERIOUSLY hard to believe because they were just so good!

Turkey Chili and Homemade Cornbread...

So I have been looking at different food blogs for a while and finally decided to try out some recipes! On Tuesday I made Turkey Chili. I have never had anything but beef chili and was hoping for something a little lighter. I thought it was good, but the recipe still needs some work before it's wonderful. Definitely worth trying though! The cornbread was so so so good! 


chili:

4 slices thick-cut bacon, diced small
2 medium yellow onions, diced small
1 large red bell pepper, stemmed, seeded, and diced small
1 and 1/2 pounds ground turkey
3 tablespoons chili powder
2 teaspoons ground cumin
1 tablespoon chopped garlic
2 teaspoon dried oregano
1 can (14.5 ounces) diced tomatoes
2 cans (15.5 ounces each) pinto beans, rinsed and drained


1) Chop the bacon fairly small and it's easy to cook. I love ANYTHING with bacon. YUM.

1) In a heavy pot (I used a big lobster pot- at least that's what I call it!) cook bacon over medium-high heat, stirring occasionally until bacon is crisp- about 8 minutes. 

2) Add chopped onions and red bell pepper, then cook stirring occasionally until vegetables are soft, about 3 minutes.

3) Add ground turkey, chili powder, cumin, garlic and oregano, then cook breaking the turkey up with a wooden spoon until cooked through and lightly brown, about 6-8 minutes. Season with salt and pepper.

4) Add tomatoes with their juice, pinto beans and 2 cups of water. (I think you could use 1 3/4 cups water). Bring to a boil. Reduce to a rapid simmer (no idea what this means, I just put it on low), partially cover the chili (no idea what this means either...I covered the pot and took the lid off to stir occasionally).  Stir occasionally until the sauce thickens, about 20 mins. 

Here's a shot with everything in it. A few notes on the chili:

1) I added more chili powder and oregano and just a bit of sugar (duh!). 
2) I would use a little bit less water- it's pretty soupy.
3) If you don't want to use less water but think it's too soupy you can always add flour to thicken the sauce. 
4) I also added a can of whole kernel corn (drained), I just felt like it needed a little something more. 
5) Today is the 2nd day I have had this chili for lunch, and it just gets better and better! So if you don't love it the first night you might LOVE it after it sits for a bit. 
6) I left the chili on low on the stove for like 4 hours. 
7) I topped with some cheddar cheese and it was great!

Now for the cornbread:

Apparently everyone makes their cornbread from scratch but I have always been a Jiffy kind of girl...until now. I thought this cornbread was pretty darn good! Maybe it was the honey butter I drowned it in??
 cornbread:
1/2 cup butter
2/3 cup sugar
2 large eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup flour
1/2 teaspoon salt

1) Preheat oven to 375*. Grease an 8-inch square pan. Melt butter in a large skillet.

2) Remove from heat and stir in sugar.

3) Quickly add eggs and beat until well blended. (I went a little too quickly then had to spend time picking egg shells out--oops!)

4) Combine buttermilk with baking soda and stir mixture into pan. As you can tell for me it didn't blend very well and then I forgot to take pictures of the next steps! 
5) Stir in cornmeal, flour and salt until well blended and few lumps remain. (This helped soak up the buttermilk!)

6) Pour batter into pan and bake 30-40 minutes, or until a toothpick inserted into the center of the cornbread comes out clean.

The blog said I needed butter and honey, so I decided I needed honey butter....Not really sure how to make it but I stirred honey and butter together and it was DELISH! Definitely a MUST.

Broccoli...

Eavesdropping at Carribou....Some man said that he swears by making broccoli this way and he looks like a respectable cook....

Fresh broccoli in a microwavable bowl...splash some water on it and spray some pan on it...then zap it in the microwave for like 2-3 minutes...he said it's "restaurant style" and my friends you can't argue with that.

Just came across this on the blog Apartment 34.  This just feels so relevant right now!!! Recently I realized I need to calm down and relax, anxiety has been through the roof... this is my new motto.

And I thought my day couldn't get any better....

Thank You Living Social...

I would just like to give one big thank you to the people at Living Social. When I woke up today I went about my usual routine, checking all the emails on my phone, yes ALL of them. I'm SO popular. Anyway something caught my eye..."Dirty Dancing Festival Admission." At first I was like OMG I am still dreaming because a) I would have known about a Dirty Dancing Festival and b) this sounded too good to be true. Honestly this was the quickest I've gotten out of bed in a while, but duty called and I had to find my computer ASAP. Lo and behold (yes first thing that comes to most of your minds is Lo hearts behold our green and gold....) right before my eyes was the Dirty Dancing Festival website. So before I go on anymore tangents, please take a second to enjoy one of my personal favorite scenes of the movie.... (let's be honest the whole movie is my personal favorite scene).



I really can't blog enough about my excitement in this matter. It was just last weekend in Charleston when I was hanging with Andy and Jane Andrews (Clarke was there in spirit since he was also watching in Raleigh) crying and getting chills watching Baby and Johnny's love story. Our hearts broke for Baby as she had to confront her dad on the porch and tell him that he had disappointed her too. SOB...who wants to tell their dad that he's disappointed them?! Then junior year of college I insisted Kelley drive to Raleigh to attend the 20th Anniversary Screening of Dirty Dancing at North Hills. Never have I ever felt so bonded with a group of women....the theater was sold out. Together we sang, cried, laughed, repeated lines we knew by heart, you get the idea. That same year I gave Kelley The Dirty Dancing Game for Christmas, which she has yet to play with me.

I know when I finally play I WILL have the time of my life. 

Anyway to get to the point of this whole post, after talking to Rebecca Jane and Dorothy we have decided lets make this dream a reality. Bec has a place we can stay and living social tickets are $12 (a bargain!!!). If you check out the website you will notice all the fun activities such as...

1) Dance Lessons- unfortunately Patrick Swayze will not be there (RIP). These are included in the Dance Festival Saturday. You can learn classics like the mambo, cha cha and merengue. 

2) Lake Lift Competition (need I say more?) I perfected that in the pool as a young child so it will be a cinch.

3) Watermelon Games (I'm assuming this means a watermelon carrying contest)
I mean who hasn't had that awkward moment of saying the wrong thing to a boy?? I'm the queen of awkward moments.

4) Golf Tournament on Sunday (I know this is going to get the boys to want to go...)
I mean this movie is SO relatable...how many times have you had to ask your dad for money?? 

A couple more things to note about the festival...

1) There is a screening of the movie out by the lake on Friday night.
2) Bill Medley of the Righteous Brothers will be giving a concert- UM he sings the song "(I've Had) The Time of My Life." As in the original with Jennifer Warnes. Seriously he does I have both Dirty Dancing Soundtracks. 
3) The Embers along with some other bands and DJ's will be performing.
4) There is a "Time of Your Life Gala"- love an excuse to dress up.
5) There is a beer and wine garden...not even sure what this is but I like the sound of it.
6) Lastly there is a silent auction...I will not let the fact that I have NO money stand in the way of me and valuable Dirty Dancing memorabilia.
